Last Saturday I had a couple of girlfriends over and we cooked…all day! We made nine meals in six hours. What a sense of accomplishment to have my freezer stocked with food for the next month. Each meal contains from four to eight servings. Since there’s only my husband and me eating, we’re set for quite some time. The beauty of this is that during the “whinny hour” of four to six when my child wants nothing more than food and sleep I don’t have to cook! I’ll prepare some sides but that’s it!

This past weekend we enjoyed Curry Apricot Shrimp over noodles. Tuesday Stuffed Chicken Breasts with Feta, Spinach and Ham. Last night, Chicken Enchilada Casserole. Yum Yum!
